If you come to Kumamoto, try horse meat sashimi and horse meat yakiniku at "Kumamoto Hormone"
If you want to eat a hearty meal of horse meat for lunch, we'll introduce you to some recommended yakiniku restaurants.

Kumamoto Hormone, located in Kumamoto's downtown area, is a 3-minute walk from Hanabatacho Station and is a horumon specialty restaurant that is visited by celebrities from all over the country. It is a yakiniku restaurant that is popular with tourists as it offers not only horumon, but also Kumamoto specialties such as Amakusa Daio, horse sashimi, and stewed horse horumon to the fullest.

During lunch time, the restaurant is constantly packed with customers. The interior is lined with autographs of famous people, making it a truly representative yakiniku restaurant in Kumamoto.

For first-time visitors, we recommend the "Horse Sashimi Set Meal (1,800 yen)," a set of Kumamoto specialties. It is a hearty lunch that includes a fresh assortment of horse sashimi, lotus root with spicy pickles, stewed horse offal, horse meat miso, rice, miso soup, and salad.

Kumamoto's new specialty, "Horse Offal Stew," is a luxurious delicacy made using only domestically produced horse offal. It is slowly simmered in white miso until it becomes soft and tender, and the gentle flavor of the miso gives it a nostalgic taste that is somehow comforting.

The horse sashimi is served in three varieties: lean meat, mane, and futago. It is also garnished with Kumamoto's specialty, mustard lotus root. The futago, which has an excellent balance of lean meat and fat, has a unique chewy texture, the umami of the lean meat, and the sweetness of the fat, making it a cut that is unique to horse sashimi. Enjoy it with spring onions and ginger to taste, and with Kyushu's sweet soy sauce.

The rare mane is delicious as is, but it tastes even better when eaten with lean meat. The mane's fresh fat combines with the deliciousness of the lean meat to create a deep and flavorful marriage! You're sure to discover a new, different taste in raw horse meat.

Don't forget to try the yakiniku grilled over binchotan charcoal. The recommended "Uma Himo" (1,400 yen) is horse belly meat with high-quality marbling.

When lightly grilled on a charcoal grill, the fat melts and the meat becomes juicy, with the rich flavor of horse meat filling your mouth. The slight sweetness and firmness make for an addictive taste.
This is a famous restaurant where you can enjoy horse meat yakiniku, stews, and horse sashimi to your heart's content, which can only be found in Kumamoto. It is recommended not only for lunch, but also for a leisurely dinner.

"Kumamoto Uokura" - Enjoy the artisanal preparation of spear squid and blackthroat seaperch delivered directly from the fishing port
If you come to Kyushu, you can't leave without trying some fresh seafood and seafood dishes!

Kumamoto Uokura is a dining restaurant located just a minute's walk from Torimachi-suji Station where you can casually enjoy high-quality fish such as Nodoguro from Tsushima and Yariika from Yobuko. In a calm restaurant with the warmth of wood and gentle lighting, you can leisurely savor the fresh seafood.

Upon entering the store, you will immediately see a large fish tank. Fresh fish delivered directly from fishing ports all over Kyushu are prepared by skilled chefs with a wealth of knowledge and skills.

First, we try the recommended dish, "Thinly Sliced Grilled Nodoguro Sashimi (2,970 yen)." The dish is also carefully prepared, with the thinly sliced Nodoguro beautifully presented.

This performance involves fresh rosy seabass sashimi being grilled right in front of you. The skillful grilling creates a lively experience that can be enjoyed with all five senses.

You'll be surprised at how smooth it is, melting in your mouth the moment you eat it. The rock salt adds just the right amount of umami to the fragrant skin and sweet fat. We also recommend trying it with homemade ponzu sauce and condiments for a refreshing change of flavor.

The "Live Squid Gozen (4,290 yen)" is a very popular lunch menu that allows you to taste fresh Yobuko spear squid, and people come all the way from outside Kyushu and Kumamoto to eat it. The set includes live squid sashimi, squid shumai, a small side dish, chawanmushi, rice, and miso soup.

The squid, which had been swimming in the tank until just a moment ago, is transparent and very fresh! It is carefully cut with a knife and looks beautiful. The light and crisp texture and refreshing sweetness are the best thing about freshly cut squid. The remaining tentacles can be served as tempura, salt-grilled, or sashimi.

Freshly cooked rice cooked in an Arita-yaki clay pot has shiny, fluffy and soft grains, and goes perfectly with fresh fish. Before you know it, you'll find yourself eating too much!
Fresh seafood sourced from all over Kyushu and specially made clay pot rice are specialty delicacies that you should try at least once.
