Craft beer born in Matsue City has a light taste, but with a distinct personality. Flying fish have been called "ago" in the San'in region since ancient times and have been familiar as a fish. They were made into paste and grilled outdoors in the past, which is why flying fish kamaboko came to be called "ago no yaki". Unlike ordinary chikuwa, these are large, flavorful, and full of umami. The secret ingredient to their deliciousness is "kasutori shochu", which is made by brewing sake lees made by Izumo brewers.

The perfectly seasoned mackerel is thick and full of fat, and you'll notice its high quality with just one bite. The kelp from Hokkaido is also thick and flavorful, with an excellent balance with the vinegared rice. The fluffy bread rolled up with sugar cream sandwiched in between makes it look just like its name "rose" and is just as delicious as its name suggests. All of the bread is handmade by artisans and has long been loved as a local bread in Shimane, and the local way to eat it is to tear it off a little at a time. You may find it hard to stop eating it.
