Udon noodles produced in the Goto Islands in Nagasaki Prefecture are counted among the three great types of udon noodles in Japan. One theory is that they have such a long history that they were brought over from China by Japanese envoys to the Tang Dynasty. Locals generally eat them in a way known as "Jigoku-taki," where the noodles are scooped directly from the boiling pot. They go perfectly with the broth made from flying fish dashi, a local specialty.
