"I've never enjoyed roasted green tea so leisurely," he said, impressed by the shop's atmosphere and service, while enjoying the taste of roasted green tea, a tea that is rooted in Ishikawa Prefecture.

The store was founded in 1912. It is a small soy sauce shop in Noto that has preserved its flavor using techniques handed down for generations. Their traditional soy sauce and miso are loved not only by locals but also all over Japan.

They immediately toured the storehouse, a registered tangible cultural property that still retains the atmosphere of the Taisho period. They could see the storehouse, where the aroma of soy sauce wafts through the air, and the koji room made of red bricks. The two of them found their minds at ease as they experienced history.

Next, we went up to the second floor and started our miso making experience. We were gently taught how miso is made and the process went smoothly. We had a fun and warm time listening to the conversation with the shop staff about Ishikawa Prefecture.

During the process of making miso, when they had to mash the softened soybeans, the two of them said, "It's like Mont Blanc!", excited by this new experience. As they worked together, they gradually got used to working together. After that, they were amazed at how the mixture solidified when they mixed the koji and mashed soybeans, and they finished their miso making experience.

You can make 1kg of miso and take it home on the day. "When you make miso for the first time, you may fail. But it's good to make it by yourself, and it tastes better," the two say, nodding in agreement. Through this collaborative effort, their bond has deepened.

The inn we chose for our trip to Ishikawa was "Kagaya," which was founded in 1906 and is located in Wakura Onsen.
